2.2.4 Microbial Gums
Microbial Gums are produced by certain selected
miroorganisms in the course of fermentation. The resulting exopolysacharides
are usually isolated from the fermentation broth by appropriate procedures.
A few typical examples are described below, for instance:
Xanthan Gum; Chitin.
